Uber-easy and fairly tasty
If you can stand a big bowl of soup for dinner instead of just a side, this isn’t bad.
1 family sized can of Condensed Chicken Noodle soup
1 can water
10 1/2 oz can of Black Beans, rinsed
16oz bag frozen Mixed Vegetables for soup with tomatoes
1 tablespoon chili powder
Brought to boil, simmered 20 minutes. Figured 3 large servings, 315 calories each.
That ended up being two actual bowls of soup (more than 3 1/2 cups), so it was like a second helping, but I had already accounted for it. Boys did pizza, which always ends up being two rounds with them, and I had soup and more soup, so I didn’t grab or crave the pizza. My soup was spicy enough and way more filling for the calories, which would have been maybe one slice… and who can eat one.
*** Also, I’d like to point out that the tempeh sandwich at Mellow Mushroom is quite tasty and not so bad for your waist.
