Chicken Smoked Sausage with Rice

Total Cook Time: 25 minutes
Bring the whole family to the table with Hillshire Farm® Hardwood Chicken Smoked Sausage. Add some sizzle with chicken rice, sweet onion, red bell peppers, peas, and green olives. So much flavor in one meal is never a bad thing!

Ingredients

  • 2 tablespoons butter or margarine
  • 1 pkg. (16 ounces) Hillshire Farm® Hardwood Chicken Smoked Sausage, cut into 1/4 inch slices
  • 1 pkg. (6.8 ounces) Chicken Rice
  • 1 medium Vidalia or other sweet onion, chopped
  • 1 red bell pepper, chopped
  • 2 cup frozen peas
  • 1/2 cup green olives, halved
  • Salt and pepper to taste

Directions:

  1. Melt butter in large 4-5 quart pan over medium-high heat; add sausage, rice, onion and peppers. Cook and stir until sausage is lightly browned and vegetables are soft.
  2. Stir in 2 cups water and seasoning packet; bring to a boil over high heat. Cover; reduce heat to low. Simmer 10 minutes.
  3. Stir in peas Cover; simmer 10 to 12 minutes or until most of liquid is absorbed and rice is tender. Stir in olives and salt and pepper to taste. Serve immediately.
Yield: 6 servings (about 1-1/2 cups each)

  • 1 garlic clove, minced
  • 1 can (13.5 oz) light coconut milk
  • 2 teaspoons curry powder
  • 1 can (20 oz) pineapple chunks, drained
  • Cooked white or brown rice
  • Chopped cilantro, chopped peanuts, raisins (optional)

Directions:

  1. Spray a large non-stick skillet with no-stick cooking spray. Add sausage, bell peppers and garlic; cook and stir on medium-high heat for 8 minutes or until peppers are crisp-tender and sausage is heated through.
  2. Combine coconut milk and curry powder. Add to chicken mixture. Bring to a boil. Reduce heat; simmer uncovered 10 minutes. Stir in pineapple; heat through.
  3. Serve over rice, sprinkle with cilantro, peanuts and raisins, if desired
